The Taste of Swiss Spring – Elderflower Syrup
It is the time again, where the air starts to smell of Elderflowers. Wherever you walk you can see the bushes with the white flowers. I love to make sirup out of it, so we went and looked for some flowers we could pick. It is a very simple thing to make, so here is the recipe that I have from Swissmilk.ch
Ingredients for 1.5 liter sirup:
8-12 Elderflower umbels
1 l water, boiling
1 kg sugar
20 g citric acid (available at drug stores)
Instructions:
Shake the Elderflower umbels (do not wash), put umbel in a bowl and pour the water over it. Add sugar and citric acid and stir until it all dissolves.
Cover it with a cloth and let it rest for about 2 days at room temperature or 4 - 5 days in the fridge. Stir from time to time.
Sift sirup through a sifter into a pan. Boil sirup and pour it into sterilized bottles as it is still very hot.
Sterilizing bottles: Pour boiling hot water over and in the glas bottles, let it rest for a minute, empty it and fill sirup into the bottle. You can keep the sirup for 10 - 12 months.
