Chicken, Lettuce stuffed Naan

Moving to a new country includes a lot of changes, one of them being new food and grocery products. Even though American food and Swiss food are not as different as maybe some African or Asian cuisine would be, it still involves a lot of new products. From simple things like finding the right potatoes or flour to more difficult stuff like not having the tasty Swiss cheeses, it all has to be tested, learned and sometimes worked around. Short side note, if you are from Switzerland and you’re visiting us, I’d love some good Swiss cheese!

One of the great discoveries I made here is naan, we eat about 2 packs every week! It can be paired with so many different things and often it can be enjoyed cold as well, making it a great lunch. I am happy to share the first naan meal with you, I hope you enjoy it as much as we did!

Chicken, Lettuce and Grilled Tomato Stuffed Naan with Tzatziki

Ingredients:

  • 4 Naan (store bought or home made)

  • Olive oil

  • 1 clove of garlic

  • 400g chicken breast

  • 2 Tbsp of mustard

  • Salt, pepper, paprika

  • 6 leaves of lettuce (any kind works)

  • 1 bell pepper

  • 12 cherry tomatoes

  • 1 bag of oven fries

  • 1 red onion

  • Tzatziki sauce

Recipe:

  1. Preheat the oven to 450F (230C). Prepare a baking tray with a baking sheet and put your naan on it. Lightly brush all the bread with olive oil. Crush the garlic and spread it on the naan. Set the tray aside for later.

  2. Wash the bell pepper and cut it into 1 inch wide strips lengthwise. Toss them in a bowl and lightly cover them in olive oil. Prepare another baking tray with a baking sheet and lay the bell peppers on one half of the sheet. On the other half spread the oven fries. Roast the peppers in the oven for about 20min, flipping them to the other side half way through. For the fries, follow the package instructions, season them with salt about half way through.

  3. Dice the chicken breast into 1 inch chunks. Add the mustard to the chicken, season with salt, pepper and paprika and mix everything until evenly covered. Heat up some cooking oil in a frying pan and fry the chicken on high heat until done. Set aside for later.

  4. Wash the lettuce and cut into 1 inch strips. Chop the red onion into small chunks. Wash the tomatoes and cut them in half.

  5. Once there are about 3min left for the fries and peppers, add the naan to the oven. The bread should be slightly toasted, but not hard, otherwise it will break when bent.

  6. Take the baked naan, spread the tzatziki on the bread. Add lettuce, chicken, tomatoes, onions, bell peppers and fries to the bread. Fold the sides inwards. To make the eating experience less messy, you can cut a baking sheet to about 10x20inches and wrap it around the bread like in the photo.
