Delicious Almond Pastry Hearts: Ideal Gift Idea

I love Prussiens, a French pastry dessert (in English it seems to be known under lots of names like “Palmiers” or “Elephant Ears”). Once I realised how easy they were to make I knew I wanted to bake them myself. Recently I saw “G wie Gabriela”, one of my favorite Instagramers, made these delicious Palmiers with an almond filling. How could you say no to that? I always cherish a good almond croissant (a croissant with pureed almond filling) and the combination of the two desserts sounded incredible. For this reason I am very pleased to share the recipe with you and I hope you will enjoy the Almond Pastry Dough Hearts as much as I did!

Recipe for 25 Almond Pastry Dough Hearts

Ingredients

  • 1 square pastry dough

  • 200 g pureed almonds

  • 2 tbsp Milk

  • 2 tsp ground almonds

  • 1 egg

  • 1 tbsp milk

  • 1-2 tbsp sliced almonds

  • powdered sugar

Instructions:

  1. Open up the pastry dough and fold it in the middle lengthwise and open it up again. (to mark the middle). (Picture 1)

  2. Mix the pureed almonds with 2 tbsp of milk and warm it up in a pan until it becomes spreadable. Then spread it on the dough and leave out the middle part. (Picture 2) Spread the ground almonds evenly on the dough and then roll both sides to the middle of the dough. (Picture 3)

  3. Take a sharp knife and softly cut 1/2 inch stripes off. Pinch together the bottom part (where there is no filling) to create the point of the heart. (Picture 4)

  4. Mix the yolk with milk (1 tbsp) and brush the hearts with it. Then sprinkle the sliced almonds over it. Let the hearts sit in a cool place for 30 minutes. This prevents them from losing their shape while baking. (Picture 5)

  5. Bake the hearts for 20 minutes at 180°C (360°F) with fan. Let them cool down on a rack and enjoy!
