Fluffy Invisible Apple Cake with Crumble Topping

I am really into baking at the moment and would love to create some sweet dishes almost every weekend. Too sad it’s only the two of us here, I really need to find more people to bake for.

Last weekend I made an invisible apple cake with crumbles and it was delicious! Man, I mean the apples just kept it perfectly moist and the crumbles gave it a nice sweetness! It was a dream!

Recipe:

Ingredients:

Cake:

  • 3 eggs

  • 75g sugar

  • 120g flour

  • 1 tsp cinnamon

  • 1 tsp vanilla paste

  • 75ml milk

  • 75g liquid butter

  • 3 - 4 apples

  • 40g sliced almonds

Crumble:

  • 100g flour

  • 60g butter

  • 50g sugar

Also:

  • powdered sugar for the top

  • Rectangular Cake mold (about 25cm (10inches) long)

Instructions:

  1. Preheat the oven to 180°C (360°F). Take the cake mold and use oil to grease it and then spread flour on all sides and the bottom. Dump any excess flour that doesn’t stick to the mold.

  2. Beat the eggs and sugar until creamy. (Picture 1) Add flour, cinnamon, vanilla, milk, and butter and mix well until it is smooth. (Picture 2)

  3. Peel the apples and remove the seeds. Then cut the apples into very thin slices either by hand or with a slice grater. (Picture 3) Carefully add them to the dough and mix. (Picture 4) Make sure the apple slices don’t break. Then add everything to the cake mold. (Picture 5) Sprinkle about 2/3 of the almond slices over the batter.

  4. Mix all the ingredients for the crumble in a bowl and use your hands to add it together into a crumble dough. (Picture 6) Then sprinkle them over the cake and mix in the last third of the almonds. (Picture 7) Bake the cake for 45 minutes and then cool it for 1 hour.

  5. Take the cake out of the mold (cut with a knife along the sides to get the cake out) and put it on a nice plate. Cover it in powdered sugar and enjoy!
