Veggie Charcuterie Board with Hummus and Toasted Pita
As I was scrolling through my blogposts I realized it’s been a while since I’ve written about a non dessert. Obviously we don’t just eat sweet meals in our household, but also try to consume some more healthy dishes from time to time.
A while ago, I discovered the idea of a pita-veggie board and liked it so much, that it’s become one of our staple dinners. It is quickly made and nourishes the body with vitamins, minerals and fiber. You can take the veggies you prefer or what you have at home. I usually add some avocado and mozzarella to have something a little more filling with it. You can simply dip the pita slices and veggies into the hummus and enjoy!
Recipe:
Ingredients:
veggies (carrots, kohlrabi, tomatoes, cucumber, fennel, bell peppers…)
1 avocado
1 mozzarella
6 pitas
oil
herbal spice or paprika
salt
hummus
Instructions:
Wash the veggies and cut them into strips. Also cut the avocado and the mozzarella.
Cut the pita into eight slices and put them on a baking tray with a baking sheet. Brush them with oil and add the herbal spice and the salt. Alternatively you can use paprika and salt. Bake the pita at 400°F (200°C) until crispy.
Add all the ingredients together with the hummus onto a big plate and enjoy!
