Make Your Own Ginger Syrup from Scratch

Ginger Syrup - Ingwersirup

My husband has been experimenting with making different syrups at home and the ginger syrup is by far my favorite. And not just mine, no, I haven’t met a single person who didn’t love the drink! I enjoy the balance of sweetness with the burn of the ginger in the back of your throat combined with the refreshing sparkling water. If you’d like a little bit of a sour flavor, add some lemon juice to it.

The ginger syrup is pretty easy to make, you simply need some time to peel all the ginger and then to boil off the water. But it makes a great gift for people or for a special drink during appetizers. I hope you’re having fun trying out the recipe!

1 liter of ginger syrup

Ingredients:

  • 2lb ginger (your job with peeling is easier, the bigger and less gnarly the pieces are) (Picture 1)

  • 4 cups of cane sugar

  • 2 cups of water

  • additional 3 cups of water

Also:

  • Glass bottles to bottle the ginger syrup

  • Cheese cloth

  • Sifter

Instructions:

  1. Peel all the ginger. That works best with either a spoon or a peeler. (Picture 2) Set aside two 3 inch pieces for later. Then cut the rest of the ginger into small wheels. Add them to a big pot. Grate the two left over pieces with a grater and also add it to the pot. (Picture 3)

  2. To the pot with ginger you add the sugar and the 2 cups of water. Mix everything. Before adding the additional water, take a wooden spoon and put the back end of it into the water to measure how deep the water is. (Picture 4) Remove the spoon and you will see the water line as a mark on the spoon. (Picture 5) Now add the additional 3 cups of water to the pot and boil the syrup. After about 1.5 hours, the 3 cups should have boiled off, and you can check the spoon water line as a point of reference. You can take a different wooden spoon and check from time to time to see if you’ve boiled off enough water.

  3. Once you’re done, place a cheese cloth over the sifter. Under the sifter you add another pot. Then pour all the syrup with the ginger over the cheese cloth. (Picture 6) Let the ginger cool off a bit. Then take both your hands and squeeze out the rest of the liquid stored in the ginger. (Picture 7)

  4. Boil water and pour it into the bottles you want to fill. (This is for sterilizing) Then empty the bottles and pour in the syrup. Let everything cool down and enjoy the drink with soda/seltzer water! (sparkling water works too)

The Susslife Tip: The cheese cloth is used to filter out even the smallest particles in the sirup.
