Italian Flatbread Wrap with Egg & Avocado
Well those avocado rolls should just be the ultimate trend food. It’s got avocado and eggs plus thin sliced, smoked beef in it. The ultimate low-carb meal. For sure it’s one of my favorite meals to make. It’s a quick and easy meal and believe me or not, you’re pretty full after one roll.
Ingredients:
2 hard boiled eggs
2 avocados
100g thin sliced, smoked beef (also called Mostbröckli) cut in squares (substitute with prosciutto)
1 chopped onion
1 tsp lemon juice
salt
pepper
4 piadine (wheat tortillas might work too)
Instructions:
Cut all the ingredients into small chunks and mix together.
Put filling on piadina and roll it up. Sometimes you will have to heat up the piadina in the pan before, so that you can properly roll it.
Heat up oil and fry the rolls on all sides for 3 minutes
