Mango Passionfruit Dessert in Layers

I am definitely someone who loves every kind of drink with tropical fruit in it! Non-alcoholic…mostly. It doesn’t matter if it is mango, passionfruit or pineapple, I will always pick that option. So you can probably guess why I really wanted to try out a dessert with those ingredients. After my first attempt, I had to change up some details, because it needed a little more flavour. Now I am super stoked to share the final recipe with you and I hope you enjoy it!

Recipe for 4 people:

Ingredients:

  • 4 small glasses

  • 6 chocolate cookies

  • 1 mango

  • 3 - 4 tbsp lemon juice

  • 150g mascarpone

  • 3 tbsp sugar

  • 3 sheets of gelatin

  • 200ml passionfruit juice (or another tropical fruit juice)

  • 1 - 2 passionfruits

Instructions:

  1. Take the cookies and crumble them into small pieces. Fill the crumbles into the four glasses. Make it more or less even. Peel the mango, cut small pieces, add the mascarpone and lemon juice and puree it. Taste and add sugar to sweeten it. Then spread the creme over the cookies in the glass.

  2. Lay the gelatin sheets into cold water for about four minutes. Warm up 50ml of the juice in a pan. (Just make it warm not hot) Press the water out of the gelatin and mix it into the warm fruit juice. You will want to use a whisk for that. Stir in the rest of the juice and let it cool down a bit. Then carefully add the juice on top of the creme. I used a funnel for that. (If you pour it to fast, it will make a hole in the mango creme. Make sure the funnel is really close to the creme) Then let the dessert cool down for at least 3 hours in the fridge.

  3. Cut a passion fruit in half, put the seeds over the dessert and serve.
