Grilled Sandwich with Egg, Zucchini & Bell Peppers

This is one of my favorite recipes! The mixture of vegetables, cheese and eggs added to the crunchy bread is so delicious. It also looks amazing because of all the colours. I usually just add whatever veggies I have at home. If you don’t like some of the ingredients in it, simply leave them away or replace them with something you like.

Recipe for 2 People:

Ingredients: (also on photo 1)

  • 1 ciabatta (kind of bread, you can use a baguette too)

  • 1/2 bell pepper, cut in slices

  • 1/2 zucchini, cut in slices

  • 1 spring onion

  • 1 mozzarella

  • 2 eggs

  • basil

  • 8 slices of bacon

  • 60g of butter (about 1/2 stick)

  • 1 clove of garlic

  • 8 tooth picks

  • paprika, salt, pepper

Instructions:

  1. Take the butter out of the fridge and let it soften.

  2. Fry eggs, zucchini, bell pepper and bacon in a frying pan. Add salt to the zucchini. Cut the green onion into rings. Wash basil and also cut the mozzarella.

  3. Cut the bread in 4 pieces and cut each piece in half horizontally (photo 2) Take a garlic press and add the garlic to the butter. Add paprika, salt and pepper to the butter and mix well. The seasoned butter now can be spread on the bread slices.

  4. Add all the “toppings” to the bread. It’s easier when you start with the flat things first. Put the mozzarella on top of everything. Cover with the top part of the bread and add the tooth picks to make it a little more stable.

  5. Put the bread on a baking tray with a baking sheet. Bake for 10 Minutes at 200°C (400°F) and enjoy.
