Cajun Popcorn Chicken Everyone Will Love
This recipe is one of my favorite meat recipes! It is loved by everyone, even my sister, who doesn’t really eat any meat. For all you Americans out there it is probably nothing crazy, but in Switzerland we definitely don’t have anything similar or comparable. We found the recipe on the amazing blog “Half Baked Harvest”. The chicken is served with a delicious honey mustard sauce and it can be combined with mashed potatoes, asparagus or green beans.
Ingredients for 4 people:
Chicken:
2 pounds boneless chicken breasts
1/2 cup buttermilk
4 cups corn flakes
4 tablespoons flour
4 tablespoons cajun seasoning*
1 cup finely shredded sharp cheddar cheese
black pepper
oil
Honey mustard sauce:
1/4 cup dijon mustard
1/4 cup honey
1/4 cup sour cream
2 tablespoons oil
juice of 1/2 a lemon
1 tablespoon cajun seasoning*
1/4 teaspoon cayenne pepper
salt and pepper
Instructions:
Cut the chicken into small 1 inch cubes. Add it to a gallon size zip top bag or plastic box. Pour the buttermilk over the chicken. Toss well to coat. (If you don’t have butter milk, you can mix one part plain (unflavoured) yoghurt and one part milk. (Picture 1)
Preheat the oven to 425° F (220°C). Line a baking sheet with parchment paper.
Crush the cornflakes with a mortar. Add the corn flake crumbs, flour, cajun seasoning, cheddar, and a pinch of pepper to a medium-sized bowl. Stir to combine. (Picture 2)
Remove each piece of chicken from the buttermilk, and dredge through the crumbs, pressing gently to adhere. Place on the prepared baking sheet. (Picture 3) Lightly brush the chicken with oil. (Picture 4) Transfer to the oven and bake for 10-15 minutes or until the chicken is cooked through.
Meanwhile, make the honey mustard sauce. Combine all ingredients in a bowl and mix until it is combined well. (Picture 5)
Serve the chicken topped with honey mustard for dipping. Add ranch for a little double-dip. Enjoy!
*Cajun seasoning:
If you are not lucky enough to live in a country where they sell cajun seasoning, then you can make it yourself. Here ist how: mix 2 1/2 tablespoons smoked paprika, 2 tablespoons garlic powder, 1 tablespoon onion powder, 1 tablespoon dried oregano, 1 tablespoon dried thyme, 1 tablespoon chili powder, 1 tablespoon cayenne pepper, 1 1/2 tablespoons salt, and 1 tablespoon black pepper. Makes 3/4 cup.
